Aldi Recipes: Omelet and Whole Wheat Bagel Crostini |
Omelet
I used 6 large Aldi eggs
- Salt, peper to taste
- Chives from the herb garden
- Olive oil to cook
- Whisk the eggs in a bowl, add a pinch of salt and pepper.
- Warm oil in the pan, add the egg mixture, cook over medium heat.
- When the eggs start to set, use a fork to create air holes, then put a lid over the pan (use a larger lid from a pot)
- When the top starts to look cooked through, loosen up the sides of the omelet with a spatula.
- Put a large plate over the pan, and turned it upside down so the omelet comes out on the plate.
- Add a little oil to the pan, transfer the omelet back into the pan upside down.
- Add chopped chives for garnish.

For sides we had a small salad and bagel crostinis
Whole Wheat Bagel Crostini
- 2 whole wheat mini bagels
- Dried basil
- 1 chopped clove of garlic
- A pinch of extra virgin olive oil
- Cut the whole wheat mini bagels into thin strips.
- Put the bagel strips on a sheet of baking paper, sprinkle them with dried basil and chopped garlic. Drizzle the bagel strips with extra virgin olive oil.
- Toast the crostinis in the oven at 400 degrees F for about 4 minutes
- Turn the bagel strips around and toasted for 2 more minutes.

The cost of the meal was:
Whole Wheat mini bagels $1.89 - used 2 = $0.40
Dozen large Aldi eggs $0.69 - used 6 = $0.35 (update 1/19 Aldi price change on eggs $0.99)
Total cost for meal excluding herbs $0.75

ReplyDeleteI make a crustless Quiche using the same omelet base as above, but adding 1/2 cup milk, 1 tblsp. oatmeal, 1 cup of cooked mixed veggies ( anything is fine, really) and lots of shredded mozzerella. Bake in nonstick pan, 325 degrees for 45-50 min. Serve with a decent salsa
