I love that I can find cheap frozen salmon at Aldi, and my husband is really enjoying being treated for dinner once in a while. Since I discovered that Aldi had salmon on sale at $3.69, I have been trying to come up with simple and cheap recipes, so that my husband can have some variety in his special salmon meals. One of the meals is Grilled Salmon with Raspberry Vinaigrette and parsley, and tonight I combined it with a fresh cheap Spinach Salad.
The grilled salmon with raspberry vinaigrette and spinach is extremely easy to make, and for a salmon meal it is quite frugal as well.
The ingredients for the Grilled Salmon:
- 1 lb Sea Queen Wild Caught Salmon Fillets
- Grandessa Signature Raspberry Vinaigrette - 1-3 tablespoons to drizzle over the salmon before grilling.
- Salt, pepper and Goya Adobo seasonings
Directions:
1. Season the salmon and leave in fridge for 5 - 30 minutes
2. Grill on a griddle or use a George Foreman grill, make sure to oil or spray first to prevent salmon from sticking.
3. Grill until both sides look nicely grilled, if the salmon does not seem as if it is cooked through, put in the oven covered for 5 - 10 minutes at 350 degrees F.
The ingredients for the Spinach Salad:
- 2 handfuls Little Salad Bar Spinach
- 1 tablespoon of chopped red onion
- 1 handful of cherry tomatoes from my garden
- 1 small pepper from my garden
- 1 tablespoon of Grandessa Signature Raspberry Vinaigrette
Directions for the Spinach Salad:
Rinse the spinach, chop cherry tomatoes, red onion and peppers (or whatever produce you have on hand). Drizzle a tablespoon of the Grandessa Signature Raspberry Vinaigrette and it is ready to serve. If you like Parmesan cheese, you can drizzle a bit over the salad as well for extra flavor.
By using ingredients from Aldi and my own garden, the salmon meal looks expensive, but it quite frugal.
