Aldi Recipes: Tomato Chicken Stew Recipe

One of my oldest son's new favorites is my cherry tomato chicken stew. With an abundance of homegrown cherry tomatoes, this is one of the recipes that to be in an attempt to find great tasting frugal uses for the cherry tomatoes from our small city garden.





Chicken Stew Recipe:

Ingredients:
1 lb of fresh chicken breast or chicken tenders cut into pieces
1 cup of fresh diced tomatoes
1 green pepper diced
1 onion diced

2 gloves of garlic
1 tableson of garlic powder
2 tablespoons of all purpose seasoning (I use Goya Adobo)
1 tablespoon of chicken seasoning
1 tablespoon of cajun seasoning (optional - I use Louisiana Bayou Blend seasoning)
1 tablespoon of extra virgin olive oil
1 1/2 cup of water



Tomato Chicken Stew Directions:
  1. Chop the chicken tenders into pieces and season, leave to marinate for at least 15 minutes. 
  2. Heat up the olive oil in your pan
  3. add the chopped onion, garlic and green pepper
  4. Cook for 2 minutes, stir
  5. Add the meat and cook for 10 minutes while stirring occasionally
  6. Add the diced tomatoes


The Tomato Chicken Stew is a very frugal meal, and together with cheap Aldi ingredients this is a very frugal recipe. Serve the Tomato Chicken Stew with Jamaican Dumplings and rice of your choice for a frugal but flavorful meal.

1 lb of chicken tenders from Aldi @ $2.69/lb
Cherry Tomatoes from the garden
Onion from Aldi (sale price $0.49)
Garlic from Aldi $0.99 (for a 3 pack of garlic)
Oil and seasoning from my pantry
